100 % Neapolitan, with a passion for fine food. Street food enthusiast which he considers the real connection with the popular tradition and the home cooked food. He first fell in love with his mother's cooking (like all Italians!), then he had a few experiences in restaurants in Naples and as manager in a renowned 'Relais' restaurant in Umbria. Together with pizza, pasta is the heart of the culinary tradition in Naples and it can be found everywhere in a hundreds of shapes and recipes. This strong passion for pasta and traditional recipes made him became a pasta chef! For the love of a beautiful Italian woman he moves to London and meets Francesco....

From Terni in Umbria, expert of fine and cured meats which are typical products of his region. He grows up in the family butchery and works as travel agent. His job allowed him to travel around the world and appreciate the multi ethnicity of the street food.
